Crock Pot Ham and Scalloped Potatoes
Hey hey everyone!! Millie from 2 Crochet Hooks here and I am so excited to be guest cooking over here with Felicia @ Nifty Thrifty Family! Best thing about guest cooking, you mess up someone else's kitchen! :) Thanks Felicia for inviting us over! Today we are making Ham and Scalloped Potatoes for the crock pot. This is a super simple recipe and you can vary the servings by increasing the amount of the ingredients. Today I am making enough for 3-4 - dinner for hubby and myself and lunch the next day. Double the ingredients to feed 6-8 people (depending on hungry level!).
You will need (I used the smaller amount):
4-8 potatoes, sliced
(we don't eat onions but add some if you like them)
2-4 cups of ham, sliced or chunks (we used fresh ham here but have used every type of ham imaginable and it works!)
1-2 cans of cream soup of your choice of flavors (we used Chicken with Herbs)
1 1/2 - 3 cups of cheddar cheese
Pepper to taste
Parsley, to taste
Add 1/3rd of your sliced potatoes to the bottom of the crock pot and a few twists of the pepper grinder (add onions if using next). Top with 1/3 of the cheese, then 1/3 ham. Continue with layers, ending with ham.
Whisk the cream soup with a half can of milk or water (smaller recipe) or 1 can of liquid (larger recipe) and a couple shakes of parsley or spices of your choice, and pour over the top. Wiggle a spoon around to make sure liquid manages to get through all the layers. I typically check about half way through to see if it needs more liquid.
Cook 6-8 hours on low for smaller recipe, 8-10 for larger or until potatoes are to desired doneness. Serve and enjoy! Do you have a great ham recipe for the slow cooker?
