Crock Pot Potato Soup

I try to cook in my Crock Pot at least once a week. It is so simple. Just place all the ingredients in the cooker, wait 6 - 8 hrs and supper is done. The newest Crock Pot meal my family tried was Potato Soup. I have tried making Potato Soup years ago on the stove and it did not turn out very good. So I was hesitant on making this meal, but my stomach out ruled my head. This actually ended up being very delicious and we ate every last drop of it. I could not decide on what recipe to try on Pinterest, so I took several that I liked and combined them to create this yummy recipe.


You will need:
1 bag of potatoes - I used half of a 10 lb bag.... lol which would be equal to a 5 lb bag.
1 bar of cream cheese
32 oz size of chicken broth
1 can of cream of chicken soup
half of a white onion

Optional at the end:
Bacon
Shredded Cheese- I used Mexican shredded cheese
Crackers

Peel your potatoes, cut them up and place them in the Crock Pot. Chop up half of a white onion and place it in the Crock Pot. Cut the cream cheese up in squares and place each square in a different location in the Crock Pot. Then take your 32 oz size of chicken broth and pour it completely in the Crock Pot. Open your can of chicken soup and pour it in.Close the lid and set that baby to 6-8 hours on low.
                                                                          I would check the Crock Pot about 4 hours in and mash some of the potatoes. When the time is almost over I would check the soup again and mash some more pototatoes with a fork until you get the thickness that you like. I cut some potatoes thin on purpose to make the soap thick.
When the soup is ready all you have to do is place in the bowls and add your optional ingredients. I used shredded cheese and bacon. We had crackers too.
