Thunder Over Louisville

Hi everyone. I am still here. It was a crazy week last week and this week is following the same path. I think it something to do with Spring. I live in the Derby City so the two weeks leading up to Derby can get fun. This past Saturday the City of Louisville hosted Thunder Over Louisville. Thunder is one of the  largest annual fireworks shows in North America. It is estimated that 500,000 people attended this years 2013 Thunder Over Louisville event. Along with the firework show there is an airshow that lead up to the grand event.

My family and I were not one of the 500,000 people attending this years air and firework show. I am not the type of person who likes really big crowds, I get very nervous when it is time to get in the big traffic jams going home. So my family and I decided to watch the fireworks from the comfort of our own home. But to celebrate the event we drove over to one of the small airports to see some of the aircraft's that were participating in the event. I was able to take a few pictures of the planes before my phone went dead. It would be my luck the one time I don't bring my big camera my phone dies.




It was fun getting to see some of the planes. When we left the airport we started driving toward downtown so we could see some to the planes in the air. We got lunch and parked on a hill and got to see several planes fly over.

Besides Thunder Over Louisville this past weekend, Sunday was my Birthday. I had the best birthday ever. We went to church, I got to pick lunch, got to take a nap, we went out for cake and ice cream then I actually got to watch a movie all the way thru. Doesn't that sound like a wonderful birthday?

Strawberry Shortcake

I have had a sweet tooth her lately. Strawberry Shortcake has been on my mind for weeks. No matter what I ate to break the craving, the craving was still there. So I decided to finally give in and make an old recipe that I have had for years. Please note that this recipe is always a hit at any type of event. If you are expecting to take home left overs, you will be surprised at how fast this cake will disappear.

Ingredients:
One box of yellow cake mix
Bag of frozen strawberries
1 tub of cool whip
1 small can of sweet condensed milk

To make this wonderful delicious cake, you first need to bake the cake following the directions on the cake box. I chose to make 2 cakes in 8 inch pans because I wanted to make some for home and to take some to work. I still used the same amount of  ingredients.


Once the cake is done either leave the cake in the pan or switch the cake out to the serving pan.


 Take a fork and poke holes all over the cake. Once you have plenty of holes in the cake take the small can of sweet condensed milk and pour all over the top of the cake.


At this point you need to make sure your frozen strawberries are thawed. Place the strawberries all over the cake. If you buy whole strawberries you will need to cut them in half.



Once the you have all the strawberries on the cake, the final thing to do is add the whip cream. Make sure the whip cream is thawed, it makes for easier spreading.
The cake will need to be refrigrated until time to eat. I usually let the my finished cake sit over night. It gives the sweet milk time to soak in the cake and make it moist.

Stuffed Chicken Pasta Shells

I found a meal that my daughter actually likes eating. I thought at first she would have nothing to do with it because it included stuffing, but she had no problem eating it. Stuffed Chicken Pasta Shells will make any picky eaters eat. I served our meal with a side of mash potatoes and bread.

Items you will need:
1 box of large pasta shells
3 to 4 chicken breasts pending on how big the chicken breasts are
1 box stove top stuffing (Chicken flavor)
1 cup mayonnaise
1 can condensed cream of chicken soup

Preheat the oven to 350 degrees. Boil the pasta per the directions on the box. I did not use the entire box of shells. I only put out what I thought my family would eat. Make the stuffing per the box. Boil the chicken until it is completely done and falling apart. When everything is done place the cooked stuffing in a large bowl. Stir in the 1 cup mayonnaise. After mixing the mayonnaise and the stuffing together and your shredded chicken.

 Place your shells in any size cake pan you desire. Please note I did not use this pan to cook in. I placed the shells on this stone just to get them out of the water.

Add the mixture to the shells filling them full. I had stuffing left over.Once the shells have been stuffed open up the can of cream of chicken soup and place in a medium bowl and fill the empty can up with up with water twice. Stir that up completely and pour that mixture over the shells. Cover the pan and let it cook for 45 minutes.

Easter 2013

I hope everyone had a wonderful Easter? The Easter Bunny came to our house. But lets not forget the reason for the season. We were very blessed to spend Easter with my wonderful family. I was able to go to my hometown church and my daughter got to sing in the children's choir. Also the Church provided a wonderful Egg Hunt for the children after church..



The Easter Bunny kind of went overboard this year. There is a bathing suit somewhere in that bucket that matches the hat, sunglasses and towel.
